Description
Climate:
A record rainfall of 1600mm over the year! The spring very rainy was real favorable to the attacks of mildew on grapes and leaves. Thanks to our vigilance we were able to protect the vines. Summer was mild and the pressure exerted by the disease decreased. A very beautiful crop was predicted but sadly, on 14th August, a very violent hail storm destroyed more than 30% of our harvest.
Soil:
Ideally located in the heart of the Esclans Valley between the Esterel and Maures mountains, the domain benefits from a stony clay-sandstone soil of red color, particularly well drained, which helps producing quality grapes and wines.
Grapes varieties:
Vermentino and Clairette.
Harvest:
We wait that the grapes reach their maturity, and then we make the harvest by hand. It is make early in the morning to keep a small temperature. We also have a cooling machine to refresh the grapes arriving in the cellar when outside temperature is too hot to keep the flavour inside the fruits , and so the quality is conserved.
Vinification:
This wine is vinified in accordance with the organic wine charter.
The mechanically harvested grapes are placed directly in the inert presses for a maceration of a few hours.
After maceration, pressing is carried out completely in the absence of air. The juices are left to settle for 24 to 48 hours. After settling and re-incorporation of the filtered muds, the juices are stored in the cold for 4 to 5 days before starting the fermentation. Fermentations start with the addition of selected exogenous yeasts. They last one week at controlled temperature (17-18 ° C).
Once the fermentation is complete, the wines are racked and put in French barrels. The wines are beaten regularly for about 2 months, in order to resuspend the fine lees which give fat to the wine. Finally, the aging lasts for 6 to 7 months before final assembly and bottling.
Tasting:
Beautiful pale gold color. Elegant nose mixing smoky notes of vanilla, floral and white fruit. The mouth is full and long, with a nice balance. The buttery finish is on candied fruit and quince paste.
It is a dry wine that pairs very well white meats and fish, it will also accompany cooked pasta cheeses, foie gras and desserts.
