Description
Climate:
A record rainfall of 1600mm over the year! (for memory 500mm in 2017 and normally 700mm on average per year).
The spring very rainy was real favourable to the attacks of mildew on grapes and leaves.
Despite our vigilance, significant damage at the time of flowering have strongly impacted (50%) our production potential. We couldn’t go back to the vineyards too soggy in order to protect them.
Summer was mild and the pressure exerted by the disease was less. The small harvest could benefit optimal conditions for good maturation of the grapes. The harvest took place in very good conditions.
Soil:
Clay-sandstone stony red links wine, particularly well draining that promotes the production of quality wines.
The vines:
Grenache and Tibouren.
Harvest:
Grapes, harvested mechanically very early in the morning goes into a crusher destremmer, and then cooled (10 ° to 12 °). They macerated then from 3 to 12 hours in the winepress without air, before pneumatic pressing. A cold pellicular maceration for about 4 days is done to settle and clarifies juices. Fermentations are carried out under the control of temperature (max 18 °).
Tasting:
Very pale flesh-colored dress. Fine nose, fruity, banana, raspberry. Rich with great persistence to finish with floral notes of violet, rose and raspberry mouth. Companion of the ideal summer, with grilled red mullet, on the Provence herbs and the anchovy butter.
